My fromage fort. Don't throw away the old pieces of cheese that are lingering in your
fridge. I'll show you how to do something with it step by step on Appetites®.
Half a pound of cheese pieces, one garlic clove, butter, black pepper, and one bottle of white
wine. Any crisp white wine will do, but make sure it's a wine that you'd want to drink
normally. First things first, I had to pour myself a glass of wine, I suggest you do the
same. Remove the rinds from the cheeses and chop whatever cheese you have into little
pieces. The beauty of this recipe is it uses whatever kind of cheese you have on hand so
you don't have to go out and buy pieces of cheese for it. Just use whatever remnants,
and you can mix it together and it's always different and always delicious.
Chop half the garlic clove roughly and save the rest for later.
Measure out a quarter to half a cup of white wine. It's all going to depend on the desired texture of the spread. If the
fromage fort is too crumbly, add a little bit more wine. Add the cheese to the processor,
then the garlic, a few tablespoons of butter, fresh ground pepper, and the white wine.
And then you blend it. Blend until it's nice and creamy, if that's how you want it to be.
Scoop into a small bowl, top with a little bit of extra pepper, and enjoy.
Fromage fort is a great way to use up all the cheese that you have leftover in your fridge, and it's wonderful
for parties. Just make sure you have a lot of toast to serve with it.
