Cachapa is a typical venezuelan dish much like pancakes, but made with sweet corn.
And for this recipe you will need:
- 450 gr. sweet corn,
- 2 eggs,
- 1 tablespoon sugar,
- 1 teaspoon salt,
- 1/2 cup of milk,
- a blender,
- 1 tablespoon butter,
- 2 tablespoons cornmeal,
- and in our case, mozzarella cheese
Place all ingredients, except the butter and the eggs, in a blender.
If the mixture is too thick, help you with a spoon.
And finally add the butter,
and two eggs.
It is very important that the batter rests for 20 minutes in the refrigerator.
Spread butter in a hot pan,
add some mixture and spread evenly.
When you see forming little holes in the cachapa, it's time to flip.
Add a bit of butter and fill with plenty of cheese.
Remember that the cachapa is eaten hot.
