Hi, it's Anne Ricci and you are watching Anne's Healthy Kitchen TV.
And today, I want to tell you about why you need to cut down commercial whole wheat products
in your diet. Of course, whole grains are healthier than
refined grains, because they contain more nutrients. But this is not the case of commercial
whole wheat foods. I have prepared a short presentation for you
and I'm going to explain why you should not eat too much of these foods, thinking they
are healthy. Whole wheat products are marketed by the food
industry as healthy, because whole wheat contains plenty of nutrients.
But are these whole wheat foods as nutritious as we are told?
Here is a wheat kernel; it is made of 3 parts. The bran is rich in nutrients.
The germ is also very rich in nutrients. The endosperm, which is the white part of
the grain, contains mainly carbohydrates and protein.
When you eat products made with refined flour, you�re only eating the endosperm, and you
miss all the nutrients that are contained in the bran and the germ.
Now here is what happens with commercial whole wheat products:
The truth is that the industry doesn�t know how to process whole grains in order to keep
all their nutrients intact. What they do is they remove the germ. So,
all the beneficial nutrients of the germ are gone�forever.
Then, they also first remove the bran and mill the endosperm. We basically get refined
flour. What about our whole wheat bread?
In order to market whole-wheat flour, a small percentage of the bran is returned to the
product. But once the bran has been damaged or cracked
open, the nutrients get oxidized very quickly. Within 3 days of processing, 90% of the nutrients
have been destroyed. You see, we are FAR away from a WHOLE wheat
food. So, if commercial whole wheat products are
not much better than the ones made with refined flour, should we avoid them?
YES, you got it right! Most commercial whole wheat bread, pasta or
cereals will have the same effect as refined grains; they will turn to sugar in your body,
and if you eat lots of them, you�ll ultimately get fat.
These foods can not only prevent you from losing weight, but they can also make you
sick if you eat them instead of other, more nutritious foods, because they are low in
nutrients such as vitamins and minerals. So, if you have friends who think they can
