We are going to make homemade tortillas. They're not too difficult to make. We just need two cups of "masa" (instant corn masa flour), and we are going to add to this two cups of water.
There are times when you will need a little more water, if you find the masa is very dry.
We are going to continue to mix and combine the water and masa like this. On its own in a little while, the masa will come to the proper consistency.
If you find the masa is to runny, you can add some more from the bag.
Now it is ready, to make little balls like this, and make the tortillas.
Now we are going to turn on the stove, and put the flame at medium. We don't want to burn the tortillas. And we will give this pan time to heat up.
OK, now we take some masa, and roll it into a ball about this size...flatten it a little, and place it into the tortilla press. (look at 2:55 to see this done without the press.)
I used a plastic bag, and I opened it on the two sides, to use it here.
I am going to leave the tortilla here for about one-half minute. It will start to dry a little, and I will turn it over.
Now that the tortilla has dried, and doesn't stick in the pan anymore, I turn in over, and let it cook for two minutes.
At this point it has cooked on this side for two minutes, it's slightly browned. I turn it over. It needs just a little more time.
The tortilla will begin to inflate, or puff up, like this. When the tortilla is slightly browned, it comes out of the pan.
We are putting our finished tortillas here. So they don't get cold. If you don't have one of these, you can use a plastic bag like this.
If you don't have a tortilla press, you can use any flat surface. For example, I'm using two cutting boards here. Press down firmly, and they come out the same.
First, remove the plastic from one side, then the other. You can moisten your fingers so they don't stick to the tortilla. Then it goes into the pan...
About the tortilla size and thickness, we don't want them too thick, so that they can cook properly. And not too thin, so that they don't break apart or get holes in them.
