Hi my name is Karl James owner of Creolesoul catering located in Round Rock, Texas and
on behalf of Expert Village I'm here to show you a fried catfish recipe. Okay now we have
our catfish dredged in our cornmeal flour mixture we are using a small deep fryer here.
We got our oil hot about oh 350 degrees and we are going to start putting in the fillets.
And you don't want to over fill your deep fryer cause it would bring the temperature
down. So we would put a few pieces in there and we let this go ahead and fry oh probably
about 10-12 minutes base on the thickness on the pieces and stuff. We want to get us
a golden color on those fillets and one of the things is you don't over fill your basket
here once they are pretty close to done they will start to float to the top. So you really
don't have to guess to much but on the average for the thickness for these fillets you are
going to be looking about 12-10 minutes. So we are since they have been in there for a
couple of minutes we are going to move them around and make sure that they don't stick.
But you don't want to miss with them to much cause we want that coating to stick to the
fish so really want that to start frying and getting crisp and hard first before you start
missing around with them cause they would be soft and you would loose a lot of that
coating. Anyway let's continue to fry our fish here and we would see you at the next
