Dining Hall Dilemmas: A Freshman Affair.
Here at Eastern Illinois University, the majority of
freshman students eat in the dining centers
at least once a day.
The dining hall is home to many healthy food choices.
Some of the choices, however, are high in fat, calories,
sugar, and sodium, and should be chosen in moderation.
Buffet-style dining leads students to believe
they need to go back for seconds.
But if you choose wisely the first time,
there's no need to go back.
Meet Mary, a freshman student at Eastern Illinois University.
She's allowing us to follow her through the dining hall
as she chooses her lunch.
Mary begins her lunch on the right foot by choosing a salad.
She begins with iceberg lettuce.
Iceberg lettuce contains little nutritional value,
but provides a good base for a salad.
Mary then adds cheese.
And more cheese.
And more cheese.
And even more cheese.
And then, oh no!
She covers her creation in ranch.
Not a very healthy salad, Mary.
Adding too much fat to salad defeats the purpose
of a potentially healthy meal.
Mary moves on to a hot dog with potato chips and dip.
This meal is high in calories, fat, and sodium,
but low in nutrients.
Eating meals such as this one every day may contribute
to a growing waistline.
Look at the plate when you finish.
You can expect a bellyache later.
With all these choices, it may be difficult
to make a healthy decision.
Remember, variety and moderation are key.
Let's build a healthier plate.
We'll begin with a whole wheat, turkey, and tomato wrap.
Now let's add a salad.
Spinach is a more nutrient-dense choice than
iceberg lettuce and contains a lot of folate, vitamin C,
and not to mention great flavor.
Add some colorful vegetables such as peppers, radishes,
mushrooms, and tomatoes, and you have a delicious salad.
It's beneficial to choose low-fat dressings
whenever possible.
Adding fruit, such as grapes and kiwi,
contribute variety to the meal.
Eating in the dining center can be a nutritious experience
if you work hard to make healthy decisions.
