I have lived away from Italy for five years
First I was in Florence to learn the language
Because I met an Italian chef in Tokyo before coming here
and I asked him where to go to learn to speak Italian well
And he was from Florence, so of course he said Florence
At first it was difficult, but I slowly picked up the language
The way of living is completely different than that of Japan
Especially for me, coming from Tokyo, always busy and engaged.
But also here a chef is very busy from morning to evening.
But it is much more vibrant, more relaxed, here
They’re always happy: smile, “buongiorno, let’s have a caffè”
Gordon Ramsey had just become a TV chef when I was in the UK in 2007
I saw him once yelling very loudly
I understood almost nothing
I had just arrived in the UK, I understood no English
“Why is he angry” I asked an Italian,
“Dunno”
I would like to do something very Italian
I'm going to move to Tokio. My restaurant in Tokyo will be very Italian. I won't do fusion
People go there to eat real Italian food
I am making a Bavette with scampi, clams, and calamari
When I was in Don Alfonso, this was the first dish I made
Then I changed it a little
It’s interesting, I think
Last year I was invited here. It is a big honor to come back here and do the Pasta World Championship
The Italian chefs here helped me a lot last year
They’re great
I am from a different country, but my heart is Italian, you know?
