Hi my name is Brandon Sarkis, on behalf on Expert Village. Today I am going to be showing
you how to make peanut brittle. As you see right here I've got out candy thermometer
on here. It's got a little clip on it so it clips to the side of pan. So it is sitting
on here. You see right now it is a little over one hundred and fifty. We want to get
this up to two hundred and ninety degrees. When it hits two hundred I am going to throw
the peanuts in. They are going to stay in there until it hit two ninety. Sugar's got
a couple of different states. It is pretty interesting; there are five or six different
stages where sugar does different things at different temperatures. What we are trying
to get it to is there hard crack stage, which is two ninety and up. So keep that in mind.
We are just going to sit here and let the thermometer go up. Another thing depending
on your corn syrup you may have to add more sugar to this recipe. Its kind of one of those
not so exactly right. This corn syrup wasn't the nationally recognized brand. So it is
actually a store brand. So i had to add a little more sugar to mine, to make mine look
right. So you know a little bit of practice. With that lets go ahead. I will come back
when it hits two hundred and add the peanuts.
