Today on Drinks With Diablo we're making
the Clover Club Cocktail.

The Clover Club Cocktail
Alright, welcome back. This is your host Jöhnny Dîablø
and today we're making the Clover Club.
This is also sometimes known as the Pink Bonnet.
And what you're going to need is Gin, Chambord,
a little bit of simple syrup, and a raw egg.
Now, this is a little tricky.
What you're going to do -
Shaker, NO ice.
And what you're going to do...
and you're also going to need some lemon here too.
About three quarters of a lemon
or ¾ ounce of lemon juice.
So, an ounce and a half of gin.
[ pouring some Bombay Sapphire gin ]
Three-quarters of an ounce of lemon juice
So we've got half [ a lemon ]
Oooh!
And a quarter makes ¾.
Mm-kay.
Half an ounce of simple syrup.
Simple syrup is just 2:1
of superfine sugar to water.
Like that.
And half an ounce of Chambord.
You can also substitute grenadine,
and you can also substitute pomegranate juice.
But we're using Chambord today.
Okay, last part.
You're going to want just the egg white,
and here's a really good way to separate egg whites.
It's quick.
I just hold the yolk in my hand,
and let the white go.
[ Separate your fingers slightly while still holding on to yolk ]
Ba-bing.
Nice and separated. Okay...
Now what we're going to do is shake this up
for about a minute
and we're going to emulsify the egg white.
So, time lapse one minute.
[ shakes Clover Club cocktail ]
OK, that's been about a minute.
Now, [ laughs ], you have to be really careful with this.
Keep a tight grip on your shaker
because the pressure builds up in there,
it really does, and it will [ burst out ]
fly out. Now we add our ice.
Now we can add our ice.
[ shake Clover Club with ice this time ]
What the egg white does is
it adds a kind of -
it gives it body. It gives it a foamy type of body to it. [ the drink ]
WHOA
Look at that. PINK.
Yeah, it gets that foamy type of head,
that's the egg white in action right there.
Okay, be careful when shaking it, keep a tight grip.
Let's taste it. It looks rather pink; it looks pretty good.
Let's see how it tastes.
[ sipping on a Clover Club ]
WOW, that's really not bad.
I kind of taste the gin, but a lot of lemon,
a little bit of raspberry. It doesn't taste potent at all
but I know that it is.
I know that if you drank a lot of these, you'd be flying high.
But the Chambord,
the gin, and the lemon juice is what's really coming through.
You can't taste the egg white at all.

1 ½ oz gin, ¾ oz fresh lemon juice,
½ oz simple syrup, ½ oz Chambord or grenadine, one egg white.
Shake "dry" for one minute, then shake and strain w/ ice.
