For using the next higher speed on your mixer which would be number four this is great for
light beating and mixing other ingredients. For instance creaming shortening, shortening
is nice and soft enough for room temperature but you don't need super power in order to
cream it. But it's also something necessary before incorporating sugar and other ingredients
when you're making cake or cookies. So by having this on four you can see it rapidly
creams the shortening. This is also good for beating cookie doughs. Something where you
don't want tons of speed you just want to make sure that you are incorporating all of
your ingredients together. Cookie doughs depending on how thick they are you are not going to
be able to get up to the super high speeds when you're mixing them. So four is the perfect
speed for nice thicker doughs that are still not nearly as thick as bread dough but are
not nearly as loose as cake batter either.
