Hi! I'm Rich Buccola of New York City and today on behalf of Expert Village, I'm going
to show you how to make stuffed eggplant. You see I have this really chopped up nice
and fine. Moving my knife in like so, cleaning the blade like so, and just chopping working
the back of the knife. Get to where it's really small particles like that nicely, finely chopped.
We just add it right to our eggplant because all of this is going to go in a frying pan.
We're going to actually cook this up nice with the meat. We're going to get it all going.
It's all going to come together. It's real fast and easy too. We actually just put the
rice in there too. We're going to let it brown and cook. The rice all cooks. What's great
is that the rice actually cooks in the oven too. There's a lot of water in this, believe
it or not. A lot of water in the eggplant, a lot of water in the peppers. With that said,
get that all ready.
