The term "alioli" sounds exotic,
but it's basically a mayonnaise with garlic... and it's delicious
and so easy to make.
But there is a trick to it!

The only ingredient that you're missing for the alioli
is the garlic.
You can prepare it by hand, but it's easier if you use
a hand mixer.
The secret is in the steps that you follow.
Since garlic is the secret in alioli,
I mash 2 or 3 garlic cloves very finely in a mortar.
I add a pinch of coarse salt, and I mash everything well...
until it becomes a paste.
Now, the garlic is ready to be mixed with one egg yolk,
lemon juice and salt.
And finally, the oil.
I recommend that you use a combination of olive oil and another neutral oil,
such as canola or sunflower oil.
I pour it, very slowly, drop by drop...
while the mixer is on.
Once it thickens, add herbs or spices,
the ones you prefer.
I love chipotle adobo.
