Hi I'm Fiona, author of 25 Foods Kids Hate And How To Get Them Eating 24 and welcome
back to my Videojug Cooking For Kids series,
and my magic tomato soup.
It's magic for three reasons, first of all I'm keeping it really simple, and using chopped
tin tomatoes, which are far less faff but still count as part of your kids' five a day.
Second of all I'm sneaking in some red pepper, which I'm not sure about you but my kids struggle
with red pepper even now, so it kind of sneaks it in nicely.
And thirdly this soup can be transformed into a pasta sauce so it's really clever.
I hope you enjoy it.
Right I have a chopped onion, a chopped red pepper and a chopped garlic clove as well.
And I've got 2 tablespoons of olive oil heating up in a pan. In they go.
And you're going to sautee all of this for about 3 or 4 minutes.

Right I'm going to give this a stir.
Ok so that's been sauteeing for about 3 minutes.
I'm going to add in my chopped tomatoes.
I love the sound of that sizzle.
I'm also going to add some flavour with some red pesto.
Sugar, sounds like a weird thing to add to a savoury dish but the sugar always brings
out the real sweetness of the tomatoes,
so it's a bit of a secret ingredient.
Don't miss this one out.
Two tablespoons of tomato puree.
Finally about a teaspoon of salt.
Again really important for flavour and now all you're going to do is give it a mix through
and let it simmer for again, 2,3,4 minutes.
Right I'm going to take it off the heat,
and I'll tell you what else you can add to this some fresh basil,
It will just really bring the whole thing together.
But as it is it's just perfect.
So after 3 or 4 minutes transfer the tomato mixture to your blender or smoothie maker,
and then very carefully whizz it up until smooth.
I'm using a tea towel just in case.
Ok now so very simply the pureed tomato mixture,
if you want to keep it as the soup, goes into the saucepan.
Right so the idea behind this tomato soup, is that it's a really creamy kind of tomato
soup,
the kind I used to love as a kid,
a real comfort food.
So I'm going to put in some milk and a little bit of cream as well.
But when we add the milk and the cream we don't want it to curdle with the heat of what's
going on already
so my tip is I have a teaspoon of bicarb of soda,
Don't worry you won't actually taste this in the soup,
add about a tablespoon of the milk.
Just to combine give it a stir, and really that's it. Add it straight into the mixture.
It might fizz up a bit but that's ok.
And now I'm going to stir in my milk first of all,
and I'm going to stir in my cream.
So heat it through for another couple of minutes or so.
Ok so the soup has been simmering away for about 2 or 3 minutes.
It's ready to serve,
you can freeze this as well by the way.
I'm going to serve this in mugs.
A couple of ladle fulls.
There we go.
And I can't think of anything nicer to serve this with than crusty bread so
a big door step.
