Hi, I’m Eugenie. Today I’m making Palets Bretons, disk cookies from Brittany region of France.
For this recipe, you will need: butter, flour, sugar, eggs, baking powder, and vanilla.
First, in a mixing bowl sift in 1 & 1/2 cups of all-purpose flour
and 1 teaspoon of baking powder. And set aside.
And cream 1/2 cup of softened salted butter.
You can make salted butter by adding 1/4 teaspoon of salt into 1/2 cup of unsalted butter.
Then add in 1/2 cup of granulated sugar and whisk until light and fluffy.
Then add in 1 teaspoon of pure vanilla extract. And stir in 2 egg yolks.
Pour the dry mixture into the wet all at once.
And fold until combined.
Make a cylinder with the batter, 1 & 1/2 inch in diameter.
And cover it with a plastic wrap.
Then rest in the refrigerator for 2 hours.
Then cut the cookie roll into 1/2 inch thik slices.
Cookies easily spread, so distribute the cookie slices into cupcake molds: one for each mold.
Bake in the oven preheated to 340 degrees F. (170 C.) for 20-22 minutes, or until crisp and brown.
Voila, palets Bretons, butter cookies from Brittany.

These are thick and crisp rich butter cookies.
They are very crumbly.
I love eating my palet with a scoop of ice cream, chocolate syrup, and chopped walnuts.
