Dishes featuring stuffed meats
always look elegant and appetizing.
Do you know how to keep the stuffing inside, and not out, when you cook the meat?
Let me tell you!
When tying meats that are stuffed, I use what I call the "P" method.
First, I place the string under the meat and make a knot.
Then, I make a second knot.
I'm not cutting this small piece because I'll need it later.
Now, with this string, I make a circle,
forming a "P."
I pull it down... tightening it.
And I do it again.
I tie it about 3 cm away, then keep repeating the steps.
Now, I'll turn it over.
I slide the string under it...
...and I knot it.
I don't want to tighten it too much because I don't want the meat to lose its shape,
but don't want it too loose, either.
Remember that short string that I left intact at the beginning?
Now's when we'll tie it. Once... twice.
