You may be aware that
there is large variety
of food products that
can be made from soybeans.
But did you know that
there are more than 20 non-GMO
soybean food products currently
in development at
University of Arkansas Department
of Food Science?
With the majority of funding
coming from the Arkansas Soybean
Promotion Board, students
and professors in the program
are working hard to develop
food products made from soybeans
grown right here in the
state of Arkansas.
Recently we sat down with
Dr. Hettiarachchy, a professor
and researcher in the department
of food science and learned
about the large variety
of products she and her
students have been developing.
My research area is mostly
in bioactives that
fight against cancer,
obesity, diabetes,
and also the Alzheimer’s
and heart disease.
So that’s the basic
research focus area.
Some of the products
include roasted and
freeze-fried soybeans,
canned vegetable soybeans,
cookies, dips, as well
as soy milk, yogurt and tofu.
According to Dr. Hettiarachchy,
soy milk, canned soybeans
and the roasted freeze-dried
beans, will be the first
of the Arkansas soybeans
products that you may be
seeing in your supermarkets
very soon.
