so before we make our smoked trout kedgeree we've got to smoke our trout not everyone's got
a food smoker
so if you haven't his how you make one you go outside and sit in the sunshine
and you scrape away a lump of oak firewood until you get these lovely little wood shavings
okay and then take a piece of foil and sprinkle those wood shavings that
on the bottom take your fish fillets
fold the foil over the fish
not too tight
take a knife and just tear
holes seven or eight on each side like that
and that'll let all the smoke in carefully
make as tight a sealed parcel as you can
put the parcel of fish straight on the heat like that and I'm gonna turn the heat up
the direct mass of heat through that is going to make those wood chips smolder
and then heat within that parcel coming from underneath will
roast it at the same time to get hot smoked trout really good technique
works a treat now some butter
and some oil the oil will stop the butter from burning too much
straight in with the onions and some garlic
I'm gonna let that soften for a moment
okay now spices
curry powder medium heat turmeric
turns everything yellow lovely some cumin
then a bit of cinnamon
that smells wonderful give it a good stir
now I'm going to add something else this
is spiced mango chutney just delicious adds sweetness to our kedgeree
in it goes have a look at my smoked trout
I can smell woodsmoke
so that is scorched really well there
the main thing is the foil parcel itself is getting hot
now got some straightforward basmati rice here I reckon this is gonna
be enough for three or four people as a snack I'll turn the heat down now
give it a good mix
they start to get the colour through the rice and I'm gonna fry it a little bit
both it's simple it's got strong flavours
and for a trout fished straight out of my little lake it is just
fantastic to use some black pepper
some salt got some sultanas
throw them in they will immediately steam and pump up
the juice of a lemon coriander
use the stems of the coriander
masses of flavour that then I'll get the coriander leaves
quick
comes our coriander oh yes
wait for the lovely the smell of wood smoked trout there
kedgeree has to be the best breakfast in the world there's nothing
like curry for breakfast
curry with smoked fish and boiled eggs can't think of anything better
fork the smoked trout fish onto the rice
there we go halved sliced boiled eggs
I think maybe one little more load of rice
one last squeeze of lemon
and there we have it perfect smoked trout kedgeree
gorgeous breakfast lovely lunch gotta have a little taste test
little bit of trout on there
needs an ice-cold lager big bowl of that kedgeree
