Now, I want to talk about green tea. Now, green tea has been celebrated recently as
having extraordinary health benefits. But, I just want to remind you that it comes from
the same plant as all the other teas do. So, you're going to get similar health benefits
no matter what kind of tea you're drinking. Now, another name for green tea is unoxidized
tea. And, just like white tea that basically means that they don't do any bruising of the
leaves when it's processed. They just wither it or steam it. And, then dry it very quickly.
If you look at the examples that I brought today, that's what keeps it green. Now, this
first tea was processed using very minimal rolling. It's very dry. But, these are all
whole leaves. And, the second one it's just another kind of green tea. These are called
pearls. And, basically the tea is rolled usually by hand into these balls and it's probably
two or three leaves. And, when this tea bruise these pearls will open up and begin to resemble
what you would recognize as a leaf. Now, the green tea has slightly more caffeine than
white tea. But, it's going to have less caffeine than your oolongs and your black teas.
