It has been said that this might be the first generation of American kids that do not live
longer than their parents which would reverse a trend that we have seen for a long time
now. That's pretty shocking, that should be a big red light for us. This is entirely our
creation and it has to do with the way we have transformed food in the last fifty years.
In general, when modern food technology takes food as nature produces it and changes it,
the overwhelming probability is that it reduces its nutritive qualities and increases its
dangerous qualities. I think this is particularly true with the way we have changed carbohydrate
foods and fats and we are seeing the results of that. It is a mismatch between genes and
environment and a lot of us have the genetic potential to respond in this way when we eat
the products of modern food technology - that is pretty much what is out there. If I am
on the road and I go to a rest stop or a convenience store, there is almost nothing there that
I will eat - a bag of peanuts if I am lucky - everything else has ingredients in it that
I wouldn't eat and that is what most people are eating and we are seeing this effect.
