OKay, I want to talk to you a little bit about the importance of having a Host and getting
your employees, as they walk in the restaurant, to make sure it's clean. What I tell our servers
and our employees here is if they're parking in the parking lot, make sure they look down
when they're walking in because we want to make sure our restaurant's clean in the front.
Because the perception, if the restaurant is clean in the front, then it's going to
be clean in the back. So, if there's any paper or debris I have them pick it up. Another
thing is that customers look at is bathrooms. The first thing I do is, after I get into
a restaurant, I'm seated and to the server, the first thing I do is go back to the bathroom.
If the bathroom's a mess, I think the kitchen's a mess. So, our host here at Rib City, every
fifteen minutes we go back there and clean up the debris. There's toilet paper, hand
washing materials, to make sure it's clean. We also have to detail our sections every
day. In detailing our section we make sure that, at the customer's level, that there
is no dirt. And if your standing up you can't see it. So, if your sitting down and you can
see barbecue sauce, mustard, ketchup, we make sure that we wipe that off ever day. Because,
again, we want the perception of a nice clean environment. Because, if the front of the
house is clean then the back of the house is clean.
