Hi, I'm Father Dominic the Bread Monk, author of "How to Be a Breadhead" and this is a Breadhead
Minute. So I've got two loaves of bread shaped. One of them round and another one in a loaf
pan that are ready for their second rising, also known as the proof. Now I prepared this
sheet tray or baking sheet, it's nice and heavy, with a piece of parchment paper, I
really prefer that to nonstick cooking spray and most test kitchens use it as well. It's
easier clean-up for one thing. I'm going to place that right in the middle so it's got
lots of room to expand. Now if I'm worried about the tops drying out a little bit then
I can take some nonstick cooking spray and spray that over the top to kind of lightly
oil them. Then of course they need to be covered to be kept from drafts. These get covered
up and will rise for about 30 minutes at around 78 degrees and then they will be ready to
