We are going to make "Umegae-mochi", the famous confection in Fukuoka prefecture.
As you may think that it's difficult to make it, It's very simple to make in fact.
Today I introduce you to simple recipe that you can do it at home.
Now, I explain the ingredients.
Rice flour, tofu and bean jam.
This three are the basic ingredients.
In addition, we will use the soybean flour and the chocolate, too.
Then, Let's get started.
I will get to it.
First, make dough.
Add the rice flour into a bowl.
Add the Tofu in place of water.
Today, I use the silken (soft) tofu.
Make knead the dough like this.
Some kind of Tofu has less fluid.
Knead it till it becomes as hard as an earlobe.
If you fell it has poor moisture to knead, add water bit by bit.
So the Tofu is a silken (soft) type, we need to add little water.
Knead it to the smooth and firm texture of an earlobe like this.
Today, we will make the cake for six.
Divide the dough into 6 parts like this.
First, divide it into two equal parts
And then, divide them into three equal parts.
Divide the dough evenly into 6 parts.
Next, stuff the fillings.
Spread the dough like this.
Place the bean jam in the center.
Wrap the bean jam in the dough.
Finally, press it to make it flat like this. And it's ready.
Next, make the soybean paste.
Add half the amount of the soybean flour of sugar.
Add a small amount of water to them.
Be careful not to be too watery.
Soybean flour(KINAKO) is made of soybean.
It has many rich protein and healthy.
In addition, the today's dough is made of the tofu.
So, the dough has many rich protein too.
I recommend them as snacks for kids.
Next, stuff the soybean paste.
Wrap it carefully like this.
Finally, wrap the chocolate.
If you don't like bean jam or soybean flour, have a try to use a chocolate.

Press it to make it flat like this. Next, cook them.
Now, cook the dough.
Warm well a frying pan.
I use the nonstick pan.
If you use a cast-iron pan, put oil in the pan.
Cook them without putting oil.
They expand when they are heated.
So, keep a space between them like this.
Cook them with putting a lid.
Trun over them after about 1 minute.
It's good timing that they begin to turn golden brown.
Next, cook them with putting the lid and cook them over low heat for 2 or 3 minutes.
Heat them until the surface begin to turn yellow color like this.
Put the lid and continue to heat untill it is cooked through.
Today's recipe is not to add sugar to the dough.
So, the sweetness is only the fillings inside.
And then, because of adding the Tofu, taste good cold too.
Then, 5 or 6 minutes has gone.
It's done when they have a bulge and cooked through.
Place them to a dish.
This is the bean jamed cake... and the soybean flour... and the chocolate...
