How to prepare carrot poricha kootu
Ingredients are - urad dhal - 2 table spoon
Pepper - 1 table spoon
Little raw rice
Only two chillies
This dish is hot due to pepper and not because of chillies
and asafoetida
Roast in a dry vessel
Add little oil and roast urad dhall, pepper, rice, asafoetida and chillies
After roasting allow them to cool
Then add coconut and grind in a mixer
Rice gives thickness ( viscosity ) to the dish
Urad dhall has turned brown
Switch off the stove
Grind in a mixer with grated coconut
Toor dhall steam cooked and mashed
Carrot pieces cooked
The ground paste of the roasted ingredients and coconut
Let us see what next
Again take some oil in a vessel
Oil is hot
Add mustard
When mustard splutters add urad dhal
Add asafoetida
Wash curry leaves and add
Add carrot pieces
I add little turmeric powder because I have already added it to toor dhal
Add cooked toor dhal
Let it boil
We don't add tamarind for poricha kootu
Add water to the ground paste and then add to the vessel
Now allow it boil
Add salt
It is an excellent side dish for rice and chappati
Pepper gives a fine and hot flavour
kootu has boiled. We can switch off the stove
I saute again with mustard, urad dhal and curry leaves
