Hi, my name is Brandon Sarkis, on behalf of Expert Village. Today I'm going to show you
how to make a really great holiday caramelized onion and sage stuffing. It's been a bit.
Let's go ahead and check on those corn bread muffins that we were making. You can see that
they're done, which is great. What I'll do right now is let them cool while I make the
mixture. That's actually saute the onions and the celery and everything that's going
to be part of the dressing. If I can stop almost burning myself with them, I'm going
to set these aside on a cooling rack, and let them cool off. Let's turn our burner on.
We're going to want to work on a fairly high heat, like seven and a half or eight. The
first thing we're going to want to do is get our butter in the pan. You can see that the
pan is already nice and hot. What we don't want to do is brown our butter. We just want
to roll it around. What I can go ahead and do in the meantime, is add in my celery and
my cucumbers; swish to make sure everything is nicely coated. Something else that we're
going to do is hit it with some salt and pepper; spill the salt and pepper. You want to keep
it moving because you want to get some nice marrying of flavors in there. What we're going
to do now is let this go for a bit, because this actually has to cook down to the point
at which it starts caramelizing. We're going to want to see some color in this, some brown,
some golds. At that point we're actually going to add the sage. Just let this go for a few
minutes, and I'll come back when it has changed a bit of color.
