On behalf of Expert Village I'm Laura Banford. I'm going to tell you the tale of two quiches.
We are about half way through baking our quiches both the quiche Lorraine and the asparagus
goat quiche. Now if you take a look what happens with these quiches is as you can see the puff
pastry which looks beautiful sticks out on top and it starts to burn, it cooks to much
before the quiche is completely done. So what I'm going to do is make a foil collar, basically
take a piece of foil and fold it up like that we are going to put it around this way, around
the edge not over the egg part but over the pastry crust. So that our beautiful pastry
does not burn I'm just going to fit it right over and this is a problem with any kind of
pie. I'm going to do it to the other one. We are going to put those back in the oven
for about 15 more minutes.
