Hi! I'm Josiah Owen with Expert Village. Now what you want to do after you've pulled out
all your potato, you want to add some salt and some pepper. You want to add your shredded
cheddar cheese and your bacon bits. You can use fresh bacon bits or the store bought.
It's up to you. The fresh always tastes better. You want to add about half a cup of sour cream,
about half a cup of ranch. I like using ranch to get a little zing in there. I personally
don't like using butter for my twice baked potatoes, but ranch always helps out. You
want to add some chives. Make sure you get all of them. You just want to mix it all up.
Make sure to kind of get those big chunks of potatoes. You don't want the consistency
to be too runny or too mushy. Just the consistency of your mom's homemade mashed potatoes. Now
what you want to do is you want to take all that mixture and stuff it into the shell.
You're going to have a little bit of the mixture left over because you've added some air and
other ingredients to it. That's fine. Let it overflow a little bit, and if anything
just eat the extra. That way you can taste and make sure it's what you want, the flavors
that you want. At this point, you're just going to add a little cheese on top and put
the rest of the skin on. You're going to bake it for about 15-20 minutes on 300.
