TODAY WE'RE GOING TO BE MAKING A
MEDITERRANEAN-STYLE BAKED CHICKEN THAT USES OREGANO,
GARLIC, AND LEMON JUICE.
AND WHAT I'M GOING TO DO IS TAKE MY KITCHEN SHEARS,
AND I'M GOING TO CUT ALONG THE SPINE -- THE SIDE OF
THE SPINE, CUTTING THROUGH THE RIBS, ALL THE
WAY DOWN TO WHERE THE SHOULDERS ARE.
MAKE SURE I GET ALL THE BONES.
AND I'M GOING TO DO THAT ON THE OTHER SIDE.
SO THAT WHEN I'M FINISHED
I CAN THEN JUST EASILY REMOVE THE SPINE.
SO NOW THAT THE SPINE IS REMOVED, I'VE EXPOSED THE
INSIDE OF THE CHICKEN, AND I'M GOING TO REMOVE ANY EXTRA FAT.
AND I'M GOING TO NOW USE A SHARP CHEF'S KNIFE, AND
I'M GOING TO CUT RIGHT THROUGH THE STERNUM, SO
I'VE GOT BASICALLY CHICKEN HALVES NOW; LIKE THAT.
I'M GOING TO GO AHEAD AND TAKE ANOTHER SHARP KNIFE,
AND I'M JUST GOING TO GO AHEAD AND REMOVE THE
LEG AND THE THIGH.
SO NOW I'VE GOT MY FOUR QUARTERS THAT WE'LL BE
ABLE TO ROAST OFF.
WHAT I'M GOING TO DO NOW, IS I'M GOING TO GO AHEAD
AND TAKE A BAKING PAN AND I'M GOING TO ADD A COUPLE
OUNCES OF BUTTER TO IT.
AND I'M GOING TO PUT IT IN THE OVEN.
AND I'M JUST GOING TO WARM IT UP FOR TWO OR THREE
MINUTES, SO THAT THE PAN ITSELF GETS WARM AND THE BUTTER MELTS.
WHILE OUR PAN IS IN THE OVEN, WHAT I'M GOING TO DO
IS I'M GOING TO FLIP OVER MY PIECES OF CHICKEN TO
EXPOSE THE INNER PART.
AND AT THIS TIME I'M GOING TO GO AHEAD AND SEASON
THEM WITH A LITTLE BIT OF SALT, BLACK PEPPER,
GRANULATED GARLIC, AND THEN THE LAST THING IS
SOME DRIED OREGANO.
I'M GOING TO GO GRAB MY PAN OUT OF THE OVEN TO
WHERE IT SHOULD BE NICE AND WARM AND THE BUTTER
SHOULD BE MELTED.
I'M GOING TO NOW TAKE MY CHICKEN SKIN-SIDE DOWN,
AND I'M GOING TO KIND OF GLIDE IT ALONG THE PAN TO
GET A NICE COATING OF BUTTER ON IT.
AND THEN I'M GOING TO FLIP IT OVER, SO THAT THE
SEASONED SIDE IS NOW DOWN.
I'M GOING TO GO AHEAD AND SEASON AGAIN.
I'M GOING TO GO AHEAD AND PUT IT IN THE OVEN AT
375 FOR ABOUT SIX OR EIGHT MINUTES.
AT THIS STAGE I'M GOING TO TAKE SOME FRESH SQUEEZED
LEMON JUICE, AND I'M JUST GOING TO GENTLY POUR A
LITTLE BIT OVER IT, EACH ONE.
AND THIS IS GOING TO ADD A NICE BRIGHT FLAVOR TO IT.
THEN I'M GOING TO BASTE THAT LEMON JUICE AND
BUTTER MIXTURE OVER IT WITH A LADLE.
WE'LL REPEAT THIS PROCESS TWO OR THREE TIMES ABOUT
EVERY SIX TO SEVEN MINUTES, UNTIL YOUR
CHICKEN REACHES AN INTERNAL TEMPERATURE OF
AROUND 155 TO 160 DEGREES.
AFTER A TOTAL OF ABOUT 25, MAYBE 30 MINUTES,
DEPENDING ON YOUR OVEN, WE'VE GOT A CHICKEN THAT
WE'VE PULLED, AND WE'RE GOING TO LET IT REST FOR A
FEW MINUTES BEFORE WE SERVE IT.
BUT AS YOU CAN SEE IT'S GOT REAL NICE COLOR ON IT.
YOU CAN SMELL, IF YOU WERE HERE, THE OREGANO, GARLIC,
AND A LOT OF THE LEMON JUICE, SO IT REALLY BLENDS
ITSELF REALLY WELL TO THIS DISH.
THE OTHER THING I'M GOING TO DO WHILE THIS IS RESTING IS
I'M GOING TO TAKE A LEMON AND MAKE A LITTLE GARNISH.
I'M JUST GOING TO TAKE SOME LEMON CIRCLES.
I'LL CUT A LITTLE SLIT IN THEM. AND WE'LL USE
THIS AS OUR GARNISH WHEN WE PLATE UP OUR CHICKEN.
SO WE'RE GOING TO GO AHEAD AND TAKE OUR
MEDITERRANEAN-STYLE CHICKEN, OVEN ROASTED,
JUST KIND OF ARRANGE IT ON THE PLATE.
MAYBE TAKE A LITTLE BIT OF YOUR PAN SAUCES TO GIVE IT
A LITTLE BIT OF MOISTURE,
AND THEN WE CAN KIND OF ELUDE TO OUR FLAVORS.

HOTSPOTS, LIKE NEW YORK FASHION WEEK.
I DREAMED IT WILL BE POSSIBLE, BUT I NEVER
THOUGHT IT WILL REALLY HAPPEN THIS BIG.

AS A STYLIST, ASHLEY HAS DONE AN AMAZING JOB.
