today we will prepare nariyal ki kheer. it can be made in 2 ways:
1)by using only coconut
2) mixing rice with coconut.
here we will prepare the kheer just with coconut.
ingredients required:
full cream milk - 1 litre or 5 cups.
raw coconut - 1 (medium sized)
sugar - 70 to 80 grams 1/3 cup.
elaichi (caradamom) - 4 (peeled and crushed)
cashew nuts - 6 to 7
almonds - 6 to 7
raisins - 1 tbsp
turn on the gas and boil milk.
till then grate the coconut.
coconut can be directly grated.
or you can remove its brown skin genlty with a knife.
peeling the coconut gives us an entirely white grated coconut.
milk has started to boil so put the grated coconut in it.
coconut can also be fried in 1 tbsp ghee till it turns light brown
stir the milk continously till it comes to boils again.
stop stiring once milk is boiling and let the kheer cook on a medium flame.
stir the kheer at regular intervals and wait til kheer turns thick
till then let us cut the dry fruits and keep them ready.
cut 1 cashew nut into 6-7 pieces.
cut almonds into thin-long strips.
peel elaichi and crush to make its powder.
attend to the kheer at all times and after every 2-3 minute stir kheer to the bottom of the utensil with a spoon.
mix should not stick to the utensil.
the kheer is turning thick.
put the cut dry fruits in it.
leave some cut almond to garnish.
put the raisins in hte kheer.
cook till kheer becomes thick and the coconut softens.
do stir once in 2 to 3 minutes.
the nariyal kheer seems to have thickened
add the sugar and mix.
turn off the gas then out elaichi powder in the kheer.
nariyal ki kheer is ready.
it is very easy to prepare this recipe
you just need to remember to stir the kheer every 2-3 minutes.
dont let milk stick to the base of the utensil else kheer will not taste good.
nariyal kheer can be made during fasts.
