Hey guys ... Today, I will be sharing a delicious Plantain
Pie recipe.
I got the inspiration from these cute plantain calabashes that 9jafoodie shared with us.
I will put the link to her blog in the description below so that you will see how she did hers.
Here are the tools and ingredients you will need.
First we peel the yam, cut it up and cook till soft.
Then set aside to cool down completely.
For the dough, we peel the over-ripe plantain and mash till as smooth as possible.
You can see that the plantain is black on the outside.
That is fine as long as the inside is not decomposed.
Sift half of the flour, the baking powder and salt into a bowl.
The baking powder is optional. I have made this with and without baking powder
and I did not notice any difference in the texture of the pies.
Add butter and mix till incorporated.
Add the mashed plantain and mix very well.
Now start adding the remaining flour. Add a little bit, mix, add, mix, add ů
The aim is to get a soft but non sticky dough and the exact quantity of flour you will need
depends on how over ripe your plantain is.
So if you use up the stated quantity of flour, just keep adding flour till you get a soft
dough that is not sticky.
Once you are happy with the dough, cover with aluminium foil or a thin plastic film and
leave to rest for about 10 minutes.
Grease the inside of the muffin tray with margarine or butter and set aside.
To make the filling: cut the onion, red pepper and boiled yam into small pieces.
Any food item that goes well with plantains will make a great filling for these.
That is why I called them Plantain Pies and not Yam Pies.
Beat the eggs, add salt and the rest of the ingredients.
Stir very well and set aside.
After 10 minutes, we knead the dough again.
Roll it out to 3mm thickness and cut with the bigger cookie cutter.
Scoop the filling into the cups and set aside.
Roll out the remaining dough and this time, use the smaller
cookie cutter not the one we used earlier.
Rub some egg on them so they will look golden when done.
I set aside some of the egg from the filling for this purpose.
Bake in a preheated oven at 200 degrees C (400F) for 20-30 minutes
or till they are golden.
If using a fan oven set to 180 degrees C or 350F.
It's done! Deliciousssss.
No joke this is so yummy! And it keeps well in the freezer.
Just bring it out from your freezer, leave to defrost on your kitchen counter for a few
hours. Then warm it up in the microwave oven for
about 2 minutes and it is as fresh as the day you baked it.
