So another local dish in Kuching that I love is the Umei.
And we're here in the ? kitchen with Chef BJ
and he's gonna take us through it, take it away!
So, we got sea bass right? Yeah. Some chilli.
It smells different so that's Bunga Kelantan right?
Lime leaf, shallots, calamansi lime juice.
So a couple of pieces? So for that kind of amount? Some sugar, great! Vinegar.
And you put it in the fridge and just leave it in there? And the finish product
is some Umei
on toasted bread and garnished with a little cilantro.
