cut 1/2 kilo of chicken thighs in big pieces . reserve
mash 2 garlic cloves , 1 pinch of sea salt , 1 pinch of saffron and 4 cloves in a mortar
add 1 splash of lemon juice to the mixture
add 1 tea spoon of cumin , 1 tea spoon of paprika and 1 tea spoon of ground coriander seed
add 1 tea spoon of ground ginger , 1/2 tea spoon of ground cinnamon and 1 pinch of ground cayenne pepper
add olive oil little by little and stir until it forms a paste
cover the cut chicken with the paste of spices and garlic
let stand for 30 minutes
fry the chicken in a griddle until it's well done
accompany with couscous
