Eid al-Adha is coming up soon
Eid al-Adha is when Muslims sacrifice a sheep to commemorate the story of Ibrahim.
in Morocco, it is a big feast
and many people, families and friends get together and cook multiple lamb dishes
So the first day they do sacrifice and then the second day they do tagines
so today, I am going to show you how to make a Delicious Tagine
that is usually made to celebrate an event whatever it is
Eid or Marriages or Engagement or birthday and so far
it is called Tagine of Meat Tfaya
Tfaya you may think it is the sweet one
When I should or have to make a couscous

It is the Caramelized Onions with the raisins
That is the sweet tfaya
today, we are going to make the savory tfaya
Again it is a base of onions
but we are going to cook the meat and top it with fried almonds and boiled eggs.
It is Delicious and super easy to make
So today, let's celebrate together and make it
Let's start . . .
First, we are going to brown the meat and onions.
On medium-high heat
add the butter to your pot as we will use butter not oil in that dish
add the finely chopped onions
and the spices (pepper, salt, tuermiec, and saffron)
Saffron is important in this dish to get a very nice flavor
Mix all the ingredients.
Once the butter melts, add the red meat (beef or lamb).
Use pieces that have bones, for example leg, shoulder, or ribs
The bone adds a unique flavor to this tagine.
Mix the ingredients.
Cover the pot and cook for around 5 minutes. Stir from time to time.
until all the meat browns.
Once the meat is browned, as you see it is ready here
add the bouquet of fresh cilantro and cover the meat with water.
Let the meat cook, until it is ready
The meat is done when it becomes very soft.
From time to time, check on the tagine, and add water as necessary. cover the pot
It is been 20 min from checking the tagine
as you can see the level of water being down. check the meat
It need more time to be cooked, so I will add more water because the meat needs to cook more
cover the pot and continue cooking the meat
It will take around 1 hour for the meat to be ready. Use a fork to check that the meat is soft.
Once the meat is cooked, removed the bouquet of cilantro from the pot
and add the chopped cilantro. Mix.
Also, taste the sauce and adjust the salt and pepper accordinlgy.
Keep in mind that the sauce will reduce so do not salt too much.
Uncover the pot, let the sauce reduce for 5 minutes until you get a thick smooth sauce.
In a flat pan, heat some vegetable oil.
Add the blanched almonds to the oil once hot.
Fry for a few minutes until the almonds have a beautiful golden color.
Make sure not to overcook or the almonds will get burnt.

Remove the almonds from the oil and place on a plate covered with paper towel to absorb any excess oil.
the sauce is reduced and now we are going to serve the tagine
So, the tagine is ready and now I'm going to show you how to serve it
To serve the tagine, first place the meat in a large plate.
So, I cooked the meat for around 1 hour and it may take you an hour to 50 min
Pour the sauce over the meat.
Peel the boiled eggs and cut them into halves.
Top the meat with the boiled egg halves
and finally top it with the fried almonds.
Serve immediately, hot, with Moroccan bread or French baguette.
