Assalaamu Alaikum and welcome to Titli's Busy Kitchen with me Titli Nihaan.
I reckon cauliflower is one of the most underrated vegetables there is.
It makes great Pakora, it makes good soup.
I love Cauliflower Cheese
but it also makes a really nice curry, particularly with potatoes.
So that's what I'm gonna do today. I'm gonna cook Aloo Gobi.
In fact, to Western ears it sounds like a strange greeting. Aloo gobi... Aloo gobi...
So for Aloo Gobi I've got 1 cauliflower that I've cut into reasonably big chunks.
There's about 500 g there.
I've got the equivalent of potato. Again, cut into big chunks.
1 finely chopped tomato, 1 finely chopped onion.
A 100 g of peas. These happen to be frozen peas.
2 very thinly sliced green chillies,
a teaspoon of garlic and ginger paste
and in here I've got a teaspoon each of chilli powder, garam masala and cumin powder.
Half a teaspoon of coriander powder and a quarter of a teaspoon of turmeric.
I've heated 3 teaspoons of ghee in my saucepan and I'm gonna add in the chillies
and the garlic and ginger paste.
I'm just gonna fry these for a minute.
Now I'll add in the onions and I'm gonna fry these until they are light and golden brown.
It's just starting to brown so I'll add in the tomato
and the peas
and cook for about 5 minutes.
Now I'll add in the spicies. Mix them around well.
Add in the cauliflower
and the potatoes
and sauté these for about 5 minutes, stirring.
OK. Now I'm gonna add in about a 100 ml of water.
Turn the heat right down.
Cover it and let it cook for about 15 minutes until the cauliflower and potatoes are tender.
After 15 minutes, check with a skewer. Oh, yes!
That's lovely! Not overdone but just nicely done.
So now I'll serve that.
Aloo Gobi.

...Gobi.
True story.
When I was a small child, I used to hate cauliflower. I wouldn't eat.
But my mother used to make the most fabulous mash potato which I really loved!
And years later, I said to mum, "Mum, I can't seem to make the same mash potato as you.
What were I doing wrong?"
And she said, "It wasn't mash potato. It was mashed cauliflower."
Mother, how could you do that to me?
