Lots of great desserts call for a graham cracker crust, but since we are a gluten free family
we usually have to leave the crust out...
COMPLETELY.
Well... last week, we found THE BEST gluten free substitute for graham cracker crust...and
just in time for Mother's Day!
Today I'll show you how we make Berried Treasure - our family's Mother's Day dessert...with
a gluten free crust.
It's easy.
You can do it too.
Let me show you how...
Our local ALDI store carries a crunchy cookie cereal that is gluten free... even though
it doesn't SAY so on the package.
Always check the label to be sure, but other sweetened corn puff cereals could work, too.
Put the cereal in a ziplock bag and beat it with the back of a large spatula to crush
it up.
Empty the crumbs into a 9 x 13 pan and pour 1/2 cup melted butter over everything.
Stir it up and then press it down as evenly as you can.
Soften 1 package of cream cheese and mix it with 1/4 cup sugar and 2 tablespoons milk.
Mix until it's creamy and add 2 cups thawed whipped topping.
Fold it in gently and spread this creamy mixture over the crust.
And here's a tip: The cream will spread easily with the back of a spoon if you dip the spoon
into a glass of water every once in a while.
Then place 1 or 2 pints of sliced strawberries in an even layer over the whole thing.
For the second layer, pour 2 1/2 cups milk into the same mixing bowl with 1 large 6 ounce
box of instant vanilla pudding.
Mix it on high for 1-2 minutes, then pour it over berries.
Chill it for several hours in the fridge or overnight...
OR even in the freezer... as long as you REMEMBER to THAW it before you serve it because RIGHT
BEFORE you serve it you'll want to spread the rest of the whipped topping over everything.
You can put more strawberries on top to make it look pretty or... you can leave them off
and let the hidden berries be a surprise treasure.
Either way, this Berried Treasure dessert is a great way to show someone special that
THEY are the REAL treasure.
