We make cake on birthdays and anniversaries.
A special cake is made on christmas using lots of dry fruits and spices.
Today we will make eggless christmas cake.
So let’s prepare eggless christmas cake.
For this we have taken, Maida - 250 gram or 2 cup
Dry plum (Aloo bukhara) - 200 gram
Dry currants (Kishmish) - 200 gram
Walnut (Akhrot) - 100 gram
Butter - 200 gram or 1 cup
Condensed milk - 300 gram or ¾ cup
Gur khand - 100 gram or ½ cup
Plain Khand - ½ cup or 100 gram
Tutti Frutti - 50 gram
Glazed cherry - 8 to 10
Almonds (Badam) - 15 to 20 (Peeled)
Orange zest - 1 tsp
Lemon zest - 1 tsp
Green cardamom (Chhoti elaichi) - 6 to 7
Cinnamon stick (Dalchini) - ½ inch
Cloves (Laung) - 2
Nutmeg (Jaiphal) - 2 to 3 pinch
Black pepper (Kali mirch) - 4-5
Baking powder - 2 tsp
Vanilla essence
Milk - ½ cup
To make cake, first we’ll remove the seeds from the dry plums and cut them into tiny pieces.
Cut them using a scissor or knife.
Remove the seeds.
We'll cut all the dry plums in this way.
Peel off the green cardamom.
Grind everything to make a powder.
All the plums are cut.
Make cardamom powder.
Now cut the walnuts into tiny pieces.
Put baking powder and maida in a filtrate and mix it well.
Filter it once again.
Now let us prepare a batter for the cake.
For the cake, first we’ll put butter in a bowl.
Take the butter on normal temperature.
We have taken salted butter.
We can take unsalted butter as well, but add 1 pinch salt to it.
Now add gur khand as well as plain khand in the butter.
Only brown khand can also be taken.
Keep mixing it till it becomes a little fluffy.
You can also mix it using a hand mixer.
Khand and butter are now completely mixed.
The batter now is quite fluffy.
Now add condensed milk to it.
If you want to make an egg cake, then add 4 eggs instead of condensed milk and also increase the quantity of sugar. As condensed milk has a lot of sugar.
In egg cake we'll take 300 gram sugar.
Increase 100 gram sugar.
Mix the batter once again after adding the condensed milk.
Now add the mixture of maida and baking powder.
Also add the grounded spices.
Just mix the batter a little.
Do not mix the batter anymore.
Just mix smoothly.
Add the remaining maida as well.
The maida is completely mixed in the batter.
Preheat the oven.
Preheat the microwave on convection mode on 180 centigrade for 5 minutes.
Add the lemon and orange zest to the batter.
Just peel off the coloured skin of orange to make a zest.
Same way, peel off the coloured skin of lemon using a peeler, this way to make a zest.
Now add walnut to it.
Add currants.
Add dry mango to the batter.
Take dry plums.
We can take any fruit as per our choice and availability such as dried khurmani or dried grapes.
Add the tutti frutti as well.
Now mix everything well.
Add 1 tsp vanilla essence.
Add milk to the batter if it is thick.
Our batter for the cake is now ready.
Take a container to make the cake.
Cut the butter paper in the size of a container.
Cut it properly.
Spread a butter paper at the base of a container.
Grease it with butter.
Spread it evenly at all sides.
Now put the cake batter in the container.
Pat the container a little, so that the batter spreads evenly.
Add almonds from the top.
Now put the cake in the oven to bake.
Put the container on top of the microwave stand.
Microwave is heated to 180 centigrade and set for 35 minutes.
After 35 minutes, check the cake.
Now we can check the cake.
Our cake is now brown in colour.
To check the cake, we can put a knife inside it.
The knife is coming out clear. No ingredients stick to the knife.
It took around 45 minutes to bake the cake.
Firstly we baked the cake for 35 minutes then we baked it for another 10 minutes till it became brown in colour.
Our cake is finally baked.
In fact this will take different time in different ovens depending on the temperature.
Leave the cake to cool down and then take it out from the container.
Cut the cake from all sides.
Now put pieces of cherry on top of the cake.
Our christmas cake is ready.
This cake is very tasty.
Christmas cake is also known as plum cake or easter cake.
