This is how you make chipotle lime chicken skewers. In a medium size bowl, add the mayonnaise,
and chipotle peppers and adobo sauce. The chipotle peppers add a smoky flavor without
being too spicy. To make it easier to chop the garlic, squash it with the back of your
knife. Chop it finally and add it to the bowl. Juice the lime and add 2 tablespoons of it
to the bowl. Chop the cilantro and add that as well. Give it all a good stir with a spatula
and reserve half of a cup of the mixture to serve as a dip. Now, take the skewers and
thread on the strips of chicken breast. If you're using wooden skewers, make sure you've
soaked them in water for at least half an hour to stop them from burning. Lay them all
on a dish and brush them with the remaining mayonnaise mixture. Make sure to brush them
evenly so they're thoroughly covered. Grill or broil the skewers for 8 minutes. Turn them
over once while cooking. The chicken should be golden on the outside and completely cooked
through. Serve with the reserve mayonnaise mixture and a wedge of lime for squeezing
over.
