Hi, this is Rich Buccola here in NYC and today on behalf of Expert Village I'm going to show
you how to make vegetable ribbon meatballs. We're going to peel these lengthwise to wrap
around our meatballs. Make sure you give them a good wash before hand. I took off all the
skins and I'm just going to discard all of that, I pick up what's remaining and I take
my paring knife and very thin as thin as possible, I'm going to go down the length of the zucchini.
So I have something like that. I don't really want it this thick. You get it that thick
just give it a little shaving off. See you want it to be this thick so we're going to
boil these. I want you to do them to all of them so again just very thinly cutting down
the length of your zucchini, see that look how nice this is so we're going to get them
in our sauce pan and boil them up and soften them up. Do this to your zucchini and I'll
do it also to my squash.
