Hi I am Lori Schneider with Figs Catering in Austin, Texas and today I am going to show
you how to make an orzo pasta with roasted mushrooms and gorgonzola cheese. Now that
I have got the thyme in with my butter and pasta I am going to go ahead and get my gorgonzola
into the bowl. Today we are using dolce gorgonzola cheese. Gorgonzola in Italian means sweet
so it is a sweet, lighter, creamier cheese so if you cannot find dolce gorgonzola, just
use regular gorgonzola cheese or stilton or any kind of blue cheese, no problem at all,
parmesan would be really nice feta would be good, just use any kind of cheese that you
like. This is our gorgonzola and you can see the blue veins running throughout it. I have
got some pieces already broken off here and all we want to do is crumble it and like I
said it is going to be very difficult to crumble but just use your fingers and get on in there
and crumble it up and again this is a dish that you can use as much as you like or as
little depending on how much you want in your dish. I really like gorgonzola cheese so I
am going to put a good amount in there. We are going to put two thirds cup in there of
gorgonzola cheese. When we add the mushrooms it is going to melt together and it is going
to taste really, really nice. Alright, that is probably pretty good right there and that
is what it will look like when you have your gorgonzola cheese in there.
