Most people told me I was crazy throwing away the security of a house and a full-time job.
I came from a low-income neighbourhood with more social problems than opportunities,
and I had to work hard to change my situation.

With my participation in various cost-free mentoring programs,
I went from flipping burgers as a teenager,
to buying a newly constructed home at the age of 22.
And with promotion after promotion,
by the age of 24,
I was already making $50,000.00 a year for the biggest bank in Canada,
which was way ahead of the curve in my circles.
This was supposed to be the dream,
but it didn't make me feel any happier.
So to me, and it didn't seem crazy
giving up all the things I never had growing up,
in order to explore my real passions,
working with communities all over the world.

When I had no formal volunteer contract
providing transport, accommodation, and a modest food allowance,
I used money saved from previous food allowances to volunteer,
exchanging training and stories in restaurants,
food stands, and with locals around the world,
while staying for free with families, and travelling by local transportation.

regardless of social status or income,
one can eat authentic:

That's delicious, but that's enough!
I can only eat so much in one day!
Informal food business are one of the most popular ways of earning a living in developing and emerging countries,
And a lot of people are interested in doing something different with local ingredients,
they just haven't had any guidance in developing something new.
When these types of motivated people find out that I've learned to cook in 20 regions around the world,
They constantly ask me for help with recipes, training,
and to help them set up their own small business, or expand existing menus.
I know first-hand how important a good mentoring system can be to somebody's development,
So I've taken the best of a number of projects I've worked in,
And I'm putting them together,
based on what people have told me they need from me.
Here's how my project's going to work:
Will you teach me the way to healthy cooking style?
There is no one almighty path, grasshopper. I will help guide you on your personal journey.
This multiple course meal is intimate and delicious.
And the profits are used to run this social project.
I'm standardizing my menu, using this space while I save to purchase my own equipment.
Your food is unique and delicious! Wherever you go, I will follow!
We'd like to rent this space for our new food stand!
I didn't only learn recipes and techniques, I developed my business and soft skills too.
I can remember in primary school, when I was being evaluated
in order to switch to a school for the gifted.
I don't want finances to be the reason why a new generation of leaders can't participate in my program.
I have thank you letters and messages from friends all over the world,
whose lives were changed thanks to my positive influence,
in a key moment of their development and direction.
