Assalaamu Alaikum and welcome to Titli's Busy Kitchen with me Titli Nihaan.
Look what I got!
These really funky aubergines! Look! Aren't they brilliant??
They make fantastic earings! I just had to buy them.
Then I got home and thought "What am I gonna do with these?"
I thought I'll do a sort of spicy bakey auberginey thing.
For my Spicy Aubergine Bake Thingy, I've got my lovely, wonderful aubergines.

400 g of potatoes, cut into thin slices.
1 finely chopped onion.
A tin of tomatoes.
In my spice tray I've got a teaspoon of coriander,
a teaspoon of cumin, half a teaspoon of turmeric and half a teaspoon of chilli powder,
2 finely chopped cloves of garlic.
The tin of sweetcorn that I didn't use in the Maqluba and
400 g of cooked lentils.
Either buy them in a tin or follow the instructions on the packet.
Let's cook!
The first thing that I'm gonna do is
blanch my potato slices in boiling water for 4 minutes.
Now drain the potatoes.
I've put 2 tablespoons of olive oil in a pan and I'll fry the onions
and the garlic.

Once the onions start to darken, add in the aubergine that I've cut into 1 cm cubes
and fry with stirring for about 6 to 7 minutes.
Once the aubergines have softened and they're starting to go brown,
add in the tomatoes,
the spices,
the sweetcorn
the sweetcorn
and the lentils.
Mix it altogether.
Turn off the heat
and it's now ready to go into our bake.
I've got a nice, big lasagne dish
and I'm gonna add in my aubergine mix.
Spread it all around nice and evenly,
then put your blanched potato slices on the top.
Sprinkle on 250 g of grated cheese.
Season with pepper.
Bake in an oven at 200 degrees Celsius for about 35 minutes.
35 minutes later you have a delicious Spicy Aubergine Bake Thingy.
Cut into slices like a lasagne and serve with peas.
So, that's Titli's Spicy Baked Aubergine Thingy.
Don't let anyone ever tell you that that's not an authentic recipe 'cause it is.
