Today I am going to share
braised pork hock with asian seasoning
Let see the ingredients we need
Soak the dried tangerine peel for 30 minutes
scrap off the white pith
from the softened side
Rinse the peanuts
and soak it in hot water for 2 minutes
then drain it well
and put it aside
It is time to blanch the pork hock
If the pork hock has bone
then add it into the cold water
If the pork hock without bone
then add the pork when the water is boiling
bring the water to boil
and cook the pork for 5-8 minutes
Now rinse and clean the cooked pork
rinse it under cold water
after cleaning the pork
put it aside and will use it later
It is time to cook the ingredients
Heat the pan adn add...
1 tbsp of cooking oil
add in the ginger slices
pan-fry it until golden
add in the garlic and shallots
Then add in the "Chu Hou" paste
Add in the onion
also the cooking wine
Add in the pork and mix it well
add also the black pepper sauce
and oyster sauce
When ingredients mix well
then add water
to cover the pork hock
just enough water to cover the pork
then add in the sugar, star Anise, tangerine peel
and bring it to boil
If you want to taste better
you can add 1 tsp of chicken powder
Now it is boiled
Then cover it with a lid
simmer it over high heat for 10 minutes
It has simmered for 10 minutes
then it is time to add the peanuts
cover it again. Turn off the heat
or you can use low heat
and simmer for 45 minutes
Pork has simmered for 40-45 mins
It is time to check if the pork is cook well
checking it with a chopstick
Insert it from the pork skin
puncture it
If it goes through
then it is done
If you are worry
you can take 1 piece and try it
Don't over simmering the pork
Otherwise it will be too soft and not crispy

easy to penetrate
and it is so chewy
then we can bring it hot and thicken the sauce
the sauce is hot again
it is time to thicken the sauce
when the sauce is thicken
we can move it to the clay pot
move the pork into clay pot and serve
braised pork hock is done
