Okay, so after you've examined the dry tea leaves, you're going to create a weak infusion.
And the way we're going to do that, is we're going to put our leaves in our cup and I always
recommend using white teaware, or at least teaware that has a white inside, because this
is going to allow you as you're examing your leaves, during cupping, and as you're looking
at the body, after you've steeped your tea, it'll allow you to actually see the true color
of the tea and not the tea up against the dark or colored background of your cup. So,
you just add a small amount of water to the tea, and just let it infuse for a few seconds.
And that's ... you're going to begin to see the water change color very slightly, and
there's going to be a lot you can learn about the quality of tea by looking at the weak
infusion. And you also want to smell it at this time, to note the initial aromas that
are released during the weak infusion. In the next couple of clips I'm going to explain
specifically what you're looking for in this weak infusion.
