The answer is yes. During fermentation,
residues of various nature accumulate on the bottom of the fermenter. Such residues,
which were formed in part during the boil and in part during the fermentation, can
alter the flavor of the must by adding unwanted flavors, known overseas as
"Off-flavors". Also the yeast after a few days of fermentation, has completed the
its life cycle and enters a phase called autolysis, where it began to settle on the
bottom of the fermenter and to degrade itself.
