Char Kuey Teow
The ingredients:
Kuey teow, eggs, bean sprouts, garlic chive leaves, cockles and/or fresh shrimps.
As for seasoning, my dad says, to your own taste.
The main ingredients for seasoning are light soy sauce, dark soy sauce and MSG (optional).
Before you begin, if you want to add in MSG, add it in the uncooked kuey teow now, just a little.
First, heat your wok, then pour in some cooking oil and let it cook a little.
Simply scramble two eggs on the hot oil.
Usually we see people put in the eggs after the kuey teow is almost done,
but my dad says the kuey teow will have the taste of egg aroma if you cook the eggs first!
Now, add in the garlic chive leaves and cook a little.
Next, cook the shrimps.
My dad says, you need cook the shrimps now because they are raw.
If you wanna add in some cockles, add them when you are almost done with the cooking.
People like to have their cockles raw or half-cooked. (Not me! I don't like cockles at all!)

Next, add in the kuey teow.

Earlier, my dad told me 500g of kuey teow is for two persons, seems like he's wrong...
Okay, next, add in the light soy sauce to taste.
Add to your own preference of how salty you want your kuey teow to taste. We won't add in any salt.
>>Me: Add in "hark yaw". (means engine oil)
>>Dad: "Hark see yaw" (means dark soy sauce), not "hark yaw"!
>>Me: Isn't "hark see yaw" and "hark yaw" the same?...
>>Dad: "Hark yaw" is for cars!
LOL!!! How silly was I?!
Ok now, back to business...
Dark soy sauce is mainly for coloring, also a little sweetness and saltiness to the food.
Use wisely...
>>Dad: Add in "chili ball" if you like a little spiciness.
>>Me: Add in "chili ball" if you like a little spiciness. What's "chili ball"?
>>Dad: Chili juice. >>Me: Blended chili. (Some confusing moment with my dad...)
Anyway, you can get this said "chili ball" at the market.
Due to the heat under the sun (my dad's cooking in the open),
and I was shooting quite near the stove,
my iPhone got overheated and i couldn't continue with the shooting...
Anyway, we are done after adding in the bean sprouts and cook a little.
You can add in the cockles if you prefer some. Cook a bit and dinner is served!
