Hi. My name is Sheena McLeod from Kitchen Connoisseur. And today on behalf of Expert
Village, were going to prepare a traditional moroccan dish known as beef and acorn squash
tagine. Now were going to prepare the vegetables while we have the meat in the oven. There
are three vegetables in our recipe for the acorn tagine. There is acorn squash, red pepper,
and red onion. When you are choosing the vegetables, look for things that are unblemished. When
you bring them home, make sure you take the labels off and wash off any excess dirt or
sand. The other thing you will need is a good cutting board, and a nice chef's knife, along
with a paring knife and a spoon to clean out the squash.
