What's up ya'll? This is Chef Sayaka.
Today, we're making "NikuJaga."
"NikuJaga" is one of the most popular and traditional Japanese dishes.
Let's get started.
Here's what you need:
sake
sweet sake
soy sauce
soup stock & brown sugar
snow peas
potatoes
carrot
beef
That's all for the NikuJaga ingredients.
First things first: You need to boil some water. That's like the first thing
the chefs do when they come into the kitchen. On to the beef,
You just want to cut it in bite-size.
And...
for the snow peas you need to get this
What do you call this? This thingy, you know. So just get rid of this.
Okay. Like that.
So we need to blanch these snow peas to give it that
nice color. And this is gonna be the garnish.
Okay next I'm gonna boil this carrot.
So you wanna boil this for about 5 minutes.
I boil the whole carrot so that it doesn't go too soft.
And it retains the texture. Okay next thing is beef.
So we're gonna sear it to keep the juices inside,
then were gonna boil it the keep it nice and tender.
Just a little bit of oil... Get your pan smoking hot.
Woo! Look at that color! And it smells good.
And then...
into the boiling water.
Let's pour the pot into a strainer.
Mmmm! Looks nice! Now, all the prep's done.
Let's put it all in the pot.
Water,
soy sauce,
sake,
sweet sake,
sugar, and dashi.
So once you get the liquid boiling, you're gonna add
the rest of the ingredients.
The potatoes, carrot, and the beef.
And let it simmer.
This is just some wax paper to keep everything covered in the liquid.
And now it's time for a glass of wine.
We're almost there.
Looking good! Ideally, you would let it cool overnight for best results.
Let's cut the carrot!
