Well today is the day off firsts. It's our first snow. We had about 10 inches. It's the
first time I'm using my Samsung Galaxy S3 camera and it's the first time I'm making
cream of broccoli soup. Don't worry about jotting any of these down. I'm going to give
you all of these ingredients again at the end. For the soup base you're going to need
2 tablespoons of butter, 1 Vedalia onion chopped, (you can use a sweet onion if you want), 1
stalk of celery chopped, 3 cups of chicken broth, and 8 cups of broccoli flowerettes.
For the rude that's going to thicken everything, you're going to need 3 tablespoons of butter,
3 tablespoons of flour, 2 cups of milk, and some ground pepper to taste. Grab a stock
pot and melt 2 tablespoons of butter and then saute you're onions and butters until they're
tender. Then you can add your broccoli and your broth and cover it and cook for about
10 minutes. Now it's time to puree this in the blender. I like this a little bit chunkier,
so I take out about a cup and a half of the broccoli flowerttes and place them aside.
Now pour about half of your mixture into the blender, making sure that you don't have any
more than half of it in the blender. This is hot stuff so make sure that when you puree
it, you start the blender a little bit slower. Bring it up to speed and make sure you hold
the towel or mit over the top so you don't burn yourself. After its all pureed, clean
your stock pot and then put it all back in the stock pot and then and now it's time to
make the rue to thicken it up. Grab a small saucepan and over medium heat drop in about
3 tablespoons of butter, melt it, stir in the flour, add the mix, and then stir it until
it gets nice and thick. Okay now pour it into your puree, stir it up and serve it right
away. Top it with a little Parmesan cheese and some hot rolls on the side, and it is
good. Well I told you I'd give you the ingredients again, so here they are. As I said, this is
the first time I made it. My wife likes it a little bit thicker, so next time I think
I'm going to use cream instead of the milk
