today we will not be making the usual rice pulao instead we will prepare sewai ka pulao.
it can be had for breakfast or as a tea time snack.
you can also pack this pulao for your child's tiffin as they will surely ilke it.
ingredients required :
sewai - 1 cup
green peas - 1/4 cup(peeled)
carrots - 1/4 cup (finely chopped)
capsicum - 1/4 cup (finely chopped)
cauliflower - 1/4 cup (finely choppd)
green corainder (dhaniya) - 2tbsp (finely chopped)
green chilly - 1 (inely chopped)
ginger - 1/2 inch long piece (grated or 1/2 tsp ginger paste)
black pepper - 5 to 6
elaichi (cardamom) - 2
cloves - 2 to3 (crush these to make coarse powder)
jeera (cumin seeds) - 1/4 tsp
salt - 3/4 tsp or add to taste
cashew nuts - 8 to 10
ghee - 1 to 2 tbsp
lemon - 1/2
firstly we need to fry sewai so turn on the gas and heat the pan
put 1 tsp ghee in hot pan.
after it melts put sewai and stir fry till it turns light brown.
keep a medium flame and stir continously making sure that sewai does not burn.
sewai is fried so turn off the gas.
now let us make the pulao.
put 1 tbsp ghee in the pan and water for it to melt.
you can use more or less amount of ghee as you wish.
pulao made in large amounts of ghee becomes very tasty but looking at the health factor we can use little or more ghee.
we have cut cashew nut in pieces (1 into half), put these in the pan and gently fry them the take the nuts out.
fry cashew nuts till they turn light pink in colour.
now put jeera in ghee followed by coarse masala powder gently fry these.
add gignger paste, geern chilly then fry the spices.
put green peas in the pan as well.
peas tend to pop while frying so cover the pan and peas till they turn a bit soft on a low flame.
peas have become a little soft so now we will put carrots, capsicum and cauliflower in the pan.
fry all the contents in the pan for 2 minutes till they turn crisp.
altogether we have used 1 cup of green vegetables.
you can put more or less of them as desired.
you can put in the vegetables you like and remove the ones you dont.
cover the pan and cook for 1 1/2 minutes so that they turn little soft.
our 2 cups of water in the pan as we are making 1 cup of sewai.
cover the pan again, we will put sewai in it after water comes to boil and covering the pan boils water faster.
put sewai followed by salt and mix the two.
cook sewai on a low flame till it absorbs water nicely.
do put on the lid.
sewai has absorbed all of the water
it took around 7 minutes for sewai to cook.
we were stirring sewai at regular intervals of 1 1/2 minutes while it was cooking.
puloa is almost prepared
squeeze the lemon juice all over it also mix some corainder.
we put corainder leaves in the end
so that the aroma lasts for long.
cover and keep pulao aside for 2 minutes (turn off the gas).
this is done so that sewai absorbs any left over water.
puloa is ready
add the remaining ghee to it which enhances the taste if this pulao even more.
also put half of the cashew nuts and mix.
take out sewai pulao in a plate garnish with green corainder and cashew nuts.
delicious sewai pulao is ready.
