Hi my name is Karl James owner of Cresolesoul Catering located in Round Rock, Tx and on
behalf of Expert Village I'm here to show you how to make Boudin. The other meat that
we're going to use in our dish is some liver and basically just going to slice this into
slices cause the we're not using to much and it's also going to be cooked together with
the pork, the holy trinity, the garlic, those green onion bottoms, some lots and lots of
peppers. A liver gives it just that flavor to that boudin, like I say it's a lot like
dirty rice and in dirty rice in the traditional version used a lot of livers, chicken livers,
here we're using a little pork liver we got our liver here all chopped up ready to add
to the rest of the ingredients and we'll move on.
