For decades and decades and decades, England was the only place in the world where you
could have such a drink in such a way, and so people still do think of tea, think of
England and English tea. People assume that tea is drunk in such a way in England that
it must be from England.
Just a little tea bag, which I will put in the cup with the water, freshly boiled.
Then I let it brew a bit, to get the colour.
When I first came to England I was drinking black tea. People were presuming that everybody
drinks white tea, so I was just too shy to say that actually I don't. So I started to
drink tea with milk. In Poland only breast feeding mothers drink milk tea, nobody else does.
Now, when I've got friends and I want to be more experimental... when I'm abroad I collect teas,
I bring all sorts of teas; tea leaves, tea bags, herbal teas, fruit teas,
... detox teas!
I'm a tea fanatic you see so I have a whole collection of tea. You know, like there's
lots of different kinds of herbal tea as well made with different types of flower.
This is honeysuckle, this is a winter plum and this is ginseng flower.
Recently there's a new kind of jasmine tea. It looks like this
and for this kind of tea you need a tall glass
where you put it in the glass and you boil some water and then you fill the water in
and then slowly the tea ball will start opening up and the flower shoots up,
it's very, very beautiful.
This is the type of ginger we are using. You have to crush the ginger and put it in the
boiling water and leave it to boil for a while and then add some milk and tea leaves.
It has to be fresh.
You have to learn how to make tea. It's one of the responsibilities
as you are growing, so my mother had to teach me how to make tea.
The way we are preparing this tea now, it's how in Tanzania, where we are from, it's how
they prepare tea. When the British came to Africa during the colonisation, they brought
with them many Indians as well to help build the rail roads, and whilst they were there
as well the Indians integrated a lot with the Africans and they taught the Africans
many new things.
